I have a confession. I don’t like tomato-based pizza. I know that sounds very weird, but I just don’t. All the traditional pizza lovers will be shunning me now.
When I make pizza for me, I use a pesto base and either vegan cheese or goat cheese with various toppings. This recipe is a simple pesto and goat’s cheese one that I love. It’s a little different from traditional but it works for me. I tend to serve this with no toppings but you could add what you like if you want to, chargrilled artichokes or roasted peppers work really well.
Two tablespoons of pesto (jarred or fresh, or basil mix, as mentioned, if we are using jarred pesto we use this one )
Two medium sized or one large bases on a baking tray or pizza stone
300g of goats cream cheese
Pre Heat the oven to 200
Mix the cream cheese and pesto thoroughly, spread it on your pizza(s), and bake for 15-20 mins until the cheese is golden and bubbly.
Serve with salad. It’s very moreish and would make a good party snack or even a nice alternative to sandwiches in lunch boxes.
You can also use vegan cream cheese, these work well for this, to make it entirely dairy-free and suitable for vegans or allergies.
