Easy & delicious sweet potato fries

I love sweet potatoes, and this recipe for easy and delicious sweet potato fries is one that a friend shared with me a long time ago. She doesn’t blog, she doesn’t even do social media (she’s probably very sensible on that front) but she makes these and they are delicious. They make a great snack, or accompaniment to a meal and are great for family meals or bbq’s in the summer too.

Sweet potatoes are not only one of my favourite kinds of starch, but they are also good for you.

Easy & delicious sweet potato fries

sweet potatoes—the orange, yellow and purple varieties of the root vegetable—are lower in calories and carbohydrates than the average spud. They’re also higher in vitamin A, an antioxidant that boosts immunity and helps you maintain healthy skin and vision. One sweet potato provides far more than 100% of your recommended daily allotment of vitamin A

Sweet potatoes are also rich in vitamin C and vitamin B6, which is important for brain and nervous system health. They’re also a good source of potassium and magnesium, which help improve heart health by helping to regulate blood pressure.

Even better, one sweet potato has about four grams of plant-based fiber, which helps you maintain a healthy weight and lowers risk of chronic diseases such as type 2 diabetes and high cholesterol

You will need a large baking sheet, and preheat your oven to 190degrees. You will also need:

4 large sweet potatoes, peeled, cut into finger sized and width slices

25ml of vegetable oil

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

¼ teaspoon paprika

1/4 teaspoon garlic powder

4 tablespoons of mayonaise

1 finely crushed clove of garlic

two tablespoons of parsley

Place your baking sheet in the oven, if you prefer to line it with baking paper or a reusable lining you can, it helps with washing up.

Take your oil and mix the garlic powder, paprika, and black pepper well. In a large bowl toss the sweet potato slices in the oil making sure they are well coated. Then spread them out on the baking tray. Make sure they are evenly spread and not sticking together.

Bake for 20 minutes until golden and crisp. This may take a little less or longer depending on your oven. You can turn them halfway through cooking to make sure they are evenly cooked and crisp.

Meanwhile, mix your mayonnaise, garlic and parsley together, as this is your dip for your fries.

Take your fries out of the oven and sprinkle them with the salt. Serve immediately with your dip. If you prefer ketchup then this is what we use, as a lower sugar/salt alternative.

    My family love sweet potato anything but I haven’t made fries for ages. I have potato wedges planned next week with a meal, I think I might change them for these x
