Welcome to Meal Plan Monday. Where we share what we are eating and how I plan our meals as a family who deal with food allergies and coeliac disease (which is NOT a food allergy, but an autoimmune disease) whilst shopping within a budget, mostly at Asda and Aldi.

Meal Plan Monday

It feels like about 5 seconds ago that I wrote last week’s Meal Plan Monday and the week has definitely flown by and I can’t quite get my head round the fact it’s Monday again.

This week it’s Burn’s Night, but I am a very bad half Scottish person who TOTALLY forgot it was happening and the husband is out on Wednesday night so we will be belataedly celebrating later in the week and I will need to get my hands on some gluten-free haggis too. Total fail of organisation on my part. May my Scottish Nana forgive me…

Our Meal Plan Monday looks like this, this week:

Monday – toad in the hole

Tuesday – salmon and noodle stir fry

Wednesday – It should be haggis but it’s pesto pasta (see above for why!)

Thursday – Gnocchi and meatballs

Friday – haggis, mash potatoes and turnip (although I am the only one who eats the ‘neeps) I plan to get a gluten-free haggis from here

Saturday – the husband and I are going out for dinner and looking forward to some Vietnamese food. The kids will be having a pizza and movie night at home.

Sunday – I am cooking our community lunch, so we will be having a meal there and a snacky supper.

It’s a relatively quiet week and our meals are on repeat, but at the moment I am really tired and trying to keep life simple and easy. Maybe after half term I will feel more like branching out and also the weather will be starting to improve and we can feel less like comfort foods.
