Easy gluten-free garlic bread

Garlic bread is a huge favourite and staple in our house and because we deal with coeliac disease and a gluten intolerance we make this easy gluten-free garlic bread which, frankly is better than you’d get in a restaurant.

Not all gluten-free bread is the same and some brands make better products than others. After some trial and testing we have decided we like Schar gluten-free baguettes for our garlic bread. Their baguettes come ready to bake which makes them perfect for garlic bread.

This makes four slices which is two of their baguettes. We like our garlic bread buttery rather than dry (there is nothing worse than dry garlic bread!) so we are generous with the butter. You can also use a dairy-free spread if you want to make this vegan.

The other secret to this is really fresh garlic. You can use puréed garlic but it doesn’t have the same punch. I also prefer dried herbs for flavour over fresh. Making the garlic butter in advance and letting it sit in the fridge for a few hours makes it even more delicious.

This serves 2.

You can double it or more for more servings.

You will need:

200g butter or dairy free spread. Make sure it’s at room temperature.

2 cloves of garlic, peeled, finely chopped

1 tbsp of dried parsley or mixed dried herbs

Baguette or ciabatta sliced length ways. I don’t like the across the bread slice method, you get less buttery garlicky goodness that way, I think.

Mix your herbs and butter and garlic bread thoroughly and then if you can, leave it in the fridge for a few hours, then remove it and let it sit so it’s back to room temperature and spreadable.

Preheat your oven to 190 degrees and line a baking tray with tin foil or use a baking dish.

Slather your butter and garlic mix onto your bread, generously.
Place on your baking tray or pan.
Bake for 12 minutes until the bread is golden and crunchy and the garlic butter is all melted and soaked into the bread.

It’s so simple my kids make it for me now. Serve with pizza, pasta, as a snack, or with soup.
