Pancake day – How do you like your pancakes?

Our family is a huge fan of pancakes and I don’t make them as often as I should or they would like. I am not sure why I don’t make them more often because they are easy to make and we have a tried and tested gluten-free and dairy-free recipe we use that works for us.

Shrove Tuesday is the day before Lent starts and people traditionally use up eggs, fat, and sugar before starting Lent. Not everyone does this now, but many people celebrate pancake day and go all out to enjoy making and eating them.

There are many ways to eat them. Growing up, we had the thin typically British kind served with lemon and sugar. I have to confess I DO NOT like eating them this way at all and haven’t ever served them to my kids like this. There are so many types and styles, from French crepes to savoury stuffed Polish, fluffy American style with maple syrup, to tiny pancakes called blinis Russian style.

What you serve on your pancakes is also subjective.

One of my children loves chocolate spread on pancakes. We have founds some excellent dairy-free, palm oil free brands that work well.

One of my children loves maple syrup and bacon.

The husband likes golden syrup but will eat pancakes in any form I make, and rarely complains.

I personally like fluffy pancakes, stacked, and topped with homemade blueberry sauce, whipped cream (we use a dairy-free brand so the whole family can enjoy it) and this year, I have added some extra crunch with some Munchy Seeds. They are great on the go, as a snack and my whole family loves them, and they are handy for lunchboxes, traveling or when you want a treat that’s healthier and better for you. They make a great topping for yogurt, ice cream, smoothie bowls and also pancakes.

This was so good, and just the right level of sweet, crunch and creaminess for a plate of pancakes. The children have asked for the same again. We are getting all our pancakes eaten well before Shrove Tuesday, but really, I don’t think you can ever have enough, do you?

  1. We love pancakes here but only ever have them on pancake day! I love them with lemon juice and golden syrup. My girls have all sorts of toppings. Chocolate spread, cream, marshmallows, strawberries and goodness knows what else.
