Meal Plan Monday – in the end of term home stretch

Meal Plan Monday. Looking at my week, and making sure the cries of “I’m hungry” don’t happen too often, but we all know that children are always hungry aren’t they? Feeding my food allergy and food choices family with a mix of cooking from scratch and sometimes throwing a ready-made meal their way. We shop between Aldi and Asda, working on a weekly budget and managing sourcing food allergy supplies.

This week we have NO after school clubs or activities and it’s a lovely calm week and the end of term is in sight. Thank goodness.

So I am at home cooking a lot and trying to clear space in the freezer for Christmas grocery shopping. How many ways can I use up frozen vegetables?

Monday – vegetarian spaghetti bolognaise with pasta. I use a meat substitute ie for this and the whole family joins me, so I don’t have to cook separately for me. su

Tuesdaytoad in the hole. I use veggie sausages for me and the gravy is vegetarian

WednesdaySausage casserole with lentils using veggie sausages

Thursday – Jacket potatoes and fillings, with salad

Friday – celebrating the end of term. The husband and I have an at-home date night planned and I will be cooking Goan fish curry, which is one of his favourite meals. I am still eating fish occasionally, and enjoy cooking and eating this. The kids will be getting a treat of pizza or chicken nuggets, depending on what I need to clear space-wise out of the freezer.

Saturday – we are out for lunch and probably afternoon tea so we won’t be eating much at home.

Sunday – we have some exciting Christmassy plans which we haven’t told the kids about and may treat them to Sunday lunch out.

And after that, we are well into Christmas food time. I will be sharing a blog post with a whole host of Christmas foods and brands we like, in the next day or two.
